Jeremy's Blender Salsa

Here's a recipe I created for making homemade salsa from items fresh from the garden (or grocery store if need be).

Jeremy’s Blender Salsa

10 – medium tomatoes
2 – large jalapenos
3 – medium to large Anaheim chilies
1 – large onion
1 – large bulb of garlic – 10-12 cloves
½ bunch – cilantro
1 tsp – fresh ground pepper
1 tsp – ground cumin
1 tsp – dill weed
2 tsp – granulated garlic powder
2 Tbsp – lime juice (lemon juice if you prefer)
Salt to taste (I end up adding about a Tbsp)
Cayenne pepper to taste (I add this to add heat without affecting the flavor)

I basically do this in halves because my blender can handle everything at once. I start by washing all the fresh produce and coarsely puree 5 tomatoes, 1 jalapeno, 1-2 Anaheim chilies, ½ onion, and ½ garlic. I pour the mix into a large saucepan and turn the heat on high. While the first half is heating I puree the remainder of the tomatoes, peppers, chilies, onion, and garlic and add that mix to the saucepan. Add the lime (or lemon if you choose) juice to the saucepan and stir it in.

Once the salsa begins to boil I turn it down to a simmer and add the measured spices. Add salt to taste. Add cayenne pepper to obtain the desired spiciness. Let it simmer for about 5 minutes. In the meantime, finely chop ½ bunch of cilantro. Turn off the heat to the salsa, add the cilantro and thoroughly stir it in.

If you are not going to can it, I never have (we eat a lot of salsa), I recommend letting it cool to room temperature on the stove with the lid off – this will help it thicken up. I usually pour it into a jar and store it in the refrigerator. It is usually eaten within a couple weeks. I have had it last as long as 3 weeks in the fridge so plan accordingly.
